I’m about to show you all one of the simplest recipes I know. Cucumber sandwiches are so quick and easy to make they almost don’t require instructions. But, for the sake of the blog, I took some pictures so ya’ll wouldn’t have to just read. Here we go!
Items you’ll need:
+Bread- I prefer these little pumpernickel squares but I couldn’t find them at my local grocery store. I ended up with a baguette of Italian bread and it worked out perfectly.
+Cream cheese- I used 12oz of whipped cream cheese, it’s much easier to mix than regular cream cheese.
+Mayo- I used 2 tbsp and kinda eyeballed it. This is more for a creamier texture than anything, feel free to skip the mayo if you so choose.
+Cucumbers- I used about 1.5 cucumbers but you could use more or less depending on the thickness in which you cut them.
+Dill- The most important ingredient and you can’t have too much of it. I just used this to taste and didn’t measure. #sorrynotsorry
First you’re going to want to whip up your cream cheese and mayo while adding the dill. I made 50 sandwiches and had plenty of leftover cream cheese. The only reason I stopped was that I ran out of bread. Whoops. So, If you don’t want as many sandwiches, I suggest smaller than 12oz of whipped cream cheese. Or, if you enjoy leftovers like I do, this is fantastic on a bagel or crackers. MMM
Once your mixture is all ready to go, peel and slice up your cucumbers. I like mine pretty thin but, it’ll add a nice crunch if you choose to have thicker slices. I wanted the dill to be the main flavor here so I chose to go with thin slices of cucumber. Please ignore my snack in the upper right corner. I can’t make any food without eating half of it in the process. Am I alone on that?
The most time consuming part of this whole thing was slicing the bread. I tried to get every single piece to be extremely even and my grandmothers knives are extremely dull. It was quite the task folks. Needless to say my new goal for the week is to sharpen all the knives.
Once everything is all good to go, it’s time to assemble! The most fun part of the whole process. Just smear some cream cheese-y goodness onto a slice of bread and top with a cucumber! Easy peasy, lemon squeazy. If you wanna get real fancy, sprinkle some dill right on top of the cucumber slices.
Perfect bite sized sandwiches that are great for any occasion. We just had a Summber BBQ theme potluck at work and this is what I brought in. Everyone loved them! I was so ecstatic. And, in case you were wondering, this was just the first layer, I topped the sandwiches with parchment paper and put on the next layer. The container is this storage container from Target, it’s not technically for food, but it is the perfect size for cupcakes. And? It’s stackable. I don’t know what i’d do without it.
